VINIFICATION

The still hand-picking as tradition, takes place in small baskets to avoid damaging the grapes.

WINE-MAKING AND BOTTLING
The first vinification operations are the diraspazione and crushing followed by a submerged cap fermentation in oak vats for about 20 days, with daily replacement maintaining a constant temperature between 28 ° C / 30 ° C, for the entire duration of fermentation same. After racking proceed with the malolactic fermentation, again in vats, and then begin the aging in French oak barrels for 24 months. It is not filtered. Ageing takes place for about six months in the bottle.

TASTING NOTES
austere wine, dry and elegant. It presents the eye with a ruby intense color and marked garnet. They detach to the nose hints of purple wild rose, sweet spices and aromatic herbs. The palate is dry with a pleasant tannin, full-bodied and with a very persistent finish.
The duration of this wine varies from 10 to 15 years.

The DOCG Roero you can match primarily on red meat stewed and boiled, typical of the Piedmont region that stand the taste, ideal also on roasted white meat - red and prized poultry. Also great for medium and mature cheeses.

WINE-MAKING AND BOTTLING
