In this vineyard the soil is composed of a sandstone predominating, sedimentary rocks, with good content in limestone, clay and sand in the course, an element that gives this land a particular soft and permeable.
In the area of origin of the DOC Langhe Favorita, we find an ideal climate for growing grapes, with good moisture combined with precipitation below the average of the province, between 650 and 720 mm. per year, concentrated mainly in spring and autumn, while in summer you have small storms that rarely affect the quality of the grapes.
The collection, still manual as tradition, takes place in small baskets to avoid damaging the grapes.
WINE-MAKING AND BOTTLING
After destemming soft crushing to avoid breaking the stems and grape seeds, which otherwise, would damage the wine quality. The time of contact between the skins and must be limited to prevent these negative polyphenols. It then goes to fermentation with yeast at a controlled temperature between 18/20 ° C, followed by stabilization and decanting. It is filtered. The refining does not occurs in the bottle.
Pale straw yellow with greenish tinges, the bouquet is fresh with intense aromas of apple and fresh fruit, the taste is fresh with a soft and delicate finish.
