Papà Celso

DOGLIANI DOCG
The winery’s flagship wine, Papà Celso is dedicated to the memory of Celso Abbona, father of Marziano, who planted every vine in the Doriolo vineyard. The wine is exclusively produced with grapes from this vineyard. It is our most important Dogliani, made from grapes grown on vines over 60 years old that give the wine a pleasant balance between elegance, power, and harmony.

70 quintals per hectare

WINEMAKING:
Crushing-destemming is followed by spontaneous alcoholic fermentation using indigenous yeasts. It is left in contact with the skins in stainless steel tanks at a controlled temperature before dry racking and cold decantation, with transfer to stainless steel tanks. It is stabilized with cold temperatures in order to avoid the use of clarifying products at the end of the process.

MALOLACTIC FERMENTATION:
Carried out entirely in stainless steel immediately after alcoholic fermentation.

AGING:
In stainless steel tanks for ten months until bottling. Then, bottle rest at a constant temperature of 14°C (57° F) for two months before release.

TASTING NOTES:
Rich and well-structured with aromas of red and black fruits, this is a balanced and harmonious wine on the palate. The light acidity and subtle tannins have hints of pulpy fruit. Can develop in the bottle for many years. Pairs well with first pasta dishes with ragù sauce, white meat, and medium-aged cheeses. Serve at a temperature between 16-18°C (61-64° F).

Zerosolfiti

LANGHE DOC ROSSO
Radically innovative, Zerosolfiti is the result of near-obsessive work and attention to the quality of the grapes before vinification. Not just with “zero added sulfites,” it also undergoes a minimum of synthetic treatments in the vineyard as well as a vigorous washing of the grapes before pressing to eliminate any residual sulfur.

FIRST YEAR OF PRODUCTION:
2007

WINEMAKING:
The grapes of the vines that make this wine are sprayed with water before harvest to flush out residual sulfur amounts used in treatments over the summer. Crushing-destemming of each single variety separately, without the addition of potassium bisulfite, followed by spontaneous alcoholic fermentation in stainless steel tanks at a controlled temperature using indigenous yeasts and in contact with the skins. Dry racking and transfer to oak barrels of 500 liters.

MALOLACTIC FERMENTATION:
Carried out entirely in barrels immediately after alcoholic fermentation.

AGING:
On its lees in the barrel for 10 months, during which weekly bâtonnage is carried out to avoid compaction of the lees. Assemblage in stainless steel without any clarifying agents, stabilizers, or filtration. Bottled in September 2014. Rests in the bottle for two months at a constant temperature of 14° C (57° F) before release.

TASTING NOTES:
With an intense, ruby red color, this wine develops vinous and fruity aromas. In the mouth it is important, tannic, and solid. Pairs well with savory meats and aged cheeses. Serve at 16-18° C (61-64° F).

Piculin

VINO BIANCO DA UVA STRAMATURA
This is the latest wine from our winery. It is made by withering the grapes for a long time on the vine and in the cellar, and then it ages in barrels for another extended period of time. Its freshness, acidity, and sweet notes blend together in perfect harmony, characteristics that make this an excellent passito to enjoy with desserts and aged cheeses.

100% Moscato

VINEYARD OF PRODUCTION:
Dogliani

AVERAGE AGE OF VINEYARDS:
25 years

FIRST YEAR OF PRODUCTION:
2013

WINEMAKING:
The grapes ripen and wither on the vines until October, and they dry further on racks in special rooms for two months. Soft pressing, static decanting, and racking with selected yeast inoculation. Alcoholic fermentation in stainless steel tanks for 22 days, then racking in oak barrels of 225 liters.

MALOLACTIC FERMENTATION:
Not carried out.

AGING:
In oak barrels for 24 months, after which the wine is assembled in stainless steel tanks. It is bottled in March 2016, then aged in the bottle at 14° C for six months before release.

TASTING NOTES:
The Piculin moscato passito has a distinct varietal aroma with notes of honey and white flowers, acacia, linden, and chamomile. In the mouth it is warm and full, with sweet notes that contrast with a vein of acidity, delicate but evident. Its rich, strong flavor characterizes it as a meditation and dessert wine, and it pairs well with pastries, hazelnut or almond cookies, apple crostata, and strudel. Overall, the delicate acidity of Piculin and its slight notes of spice that come from aging in tonneaux also make it a good pair with aged, fatty cheeses or herbed cheeses.
