Quinto rare Old Vine

Varietal: 100% Tempranillo from 47 years old vines
Alcohol Content: 14%
Winemaking
Own vineyards. Grapes harvested during night hours and hand-picked in small 30kg cases at the end of September. Grapes chosen in the vineyard and in a selection table later on, taken the stems off and put into fermentation vats to carry out a pre-fermentation cold maceration for up to 96 hours that will highlight great bouquet afterwards. Added selected yeast and fermented at 22-28ºC. Malolactic fermentation developed within brand new French oak barrels.
Ageing:
15 months in new French and American Oak casks
Tasting Notes:
Intense deep and bright cherry colour with ruby highlights. Intense, complex nose
highlighting the age of the vines and quality of the wood.
Preserved black fruit and lactic touches. Dark-roasted, smoky notes from barrel ageing.
Mineral, liquorice, eucalyptus and cocoa notes assembled to perfection with a superb and well integrated oak.
Flavoursome, full-bodied, very balanced, dry and verlvety. Structured, elegant and complex.
Long finish with a lingering black fruit and lactic feel on the back palate.
Best with:
Red and hunting meat, matured cheese, stews and roasted lamb . Very good with dark cocoa and roasted meets in general.

Búho Negro Vineyard Selection

Varieties: Tempranillo, 100%

Winemaking
Own vineyards. Grapes, from 45 years old bushed Tempranillo vines, night harvested and hand-picked in small 30kg cases at the end of September. Grapes chosen in a selection table, taken the stems off and put into fermentation vats to carry out a prefermentation
cold maceration for 72 hours that will highlight its bouquet and color later on, added selected yeast and fermented at 22-26ºC.
Ageing:
12 months in French and American Oak casks
Tasting Notes:
Intense deep cherry colourwith ruby highlights
Intense, complex nose highlighting the age of the vines, violets, wildberries and blackberries.
Preserved black fruit and lactic touches. Dark-roasted, smoky notes from barrel ageing.
Flavoursome, full-bodied, very balanced and soft. Structured and complex. Long finish. Lingering black fruit and lactic feel on the back palate.
Best with:
Red and hunting meat, matured cheese. Very good with dark cocoa and roasted meets.

Badia

Varieties: Muscat 70%, Sauvignon Blanc 30%
Alcohol Content: 12,5%
Winemaking:
Own vineyards. Grapes harvested at the end of August. Night Harvesting Grapes chosen in a selection table, taken the stems off and macerated by means of a pneumatic press for 8 hours. Static removal of sediment and controlled fermentation at 16ºC wiht selected yeasts. Made from 50 % of each variety of grape. Stopping fermentation with 20 g/l sugar by cold methods.
Tasting Notes:
Pale yellow color with light green tones.
Intense flower aroma characteristic of Moscatel grapes, white flowers and tropical hints of Sauvignon Blanc.
Best With:
As a snack, with fresh and soft cheese. Perfect with fruit desserts.
Serving temperature from 5º to 7ºC

OUR HISTORY
Quinta de Aves’ history dates back to the 80s, when its founder, Don Manuel Casado Casla, decided to acquire the property―which comprises 600 hectares and several farms―encouraged by his great passion for the field and his personal link with the rural world.

After 25 years taking care of the soil and improving the vineyards, in 2006, following the recognition of the excellent quality of their grapes, the family decided to start producing and bottling their own wines under the brand Quinta de Aves. To do so, they built a winery, integrated into the vineyard.

In 2008, thanks to the high quality of their grapes, and fruit of their knowledge and dedication to the field, as well as the support of excellent technicians and oenologists, they launched the first wines to the market, getting the unanimous recognition of the sector in both national and international contests. Such positive reception gave them the necessary impetus to continue to rely on their great raw material as well as to perfect the cultivation of their vines and the manufacturing processes of their wines, with the fundamental aim of always offering the highest quality.

Today, with the support of a multidisciplinary team in which youth and experience is mixed in equal parts, Quinta de Aves is present in over 20 countries, and still pursues the objective of consolidating itself as a renowned brand in the world thanks to its philosophy and its good performance in its vineyards―with a firm commitment to provide customers and consumers with the highest quality―, in its manufacturing processes, and in all its wines.
