Barolo

Grape variety: 100% Nebbiolo in its Michet, Lampia and Rosè sub-varieties.

Vine-Training system and density: Guyot, 5000 vines per hectare.

Altitude: 350 m above sea level.

Harvest time: manual in the second half of October.

Winemaking: traditional Barolo with fermentation of about 15/20 days at 26°C. De-stemming, soft pressing of the grapes. The must is pumped over on a dèlastage way to improve the extraction of the colour and the varietal aromas. After the malolactic fermentation the wine is matured in Slavonian and French wooden casks and barrels with weekly topping up, tastings and analyses to make sure the wine is developing correctly.

Ageing: 3 years, 2 years in oak, barrels and 12 months in bottle.

Characteristics: brilliant garnet red colour.
Deeply scented bouquet; it develops from the dry flowers and wild rose scent to "tar" exalting the ethereal bouquet. Velvety, rich, ripe taste; tannic impressive and well balanced. It is a powerful and rich wine.

Food pairing: excellent with grilled red meats, meats cooked on the spit; "haute cuisine" white and red meats with white and dark sauces. Superb with truffle. It is best to decant and serve at 18°C.

Awards: Gambero Rosso – Two Glasses; Decanter WWA Bronze Medal; Wine Enthusiast Magazine 93 Points.

Sot Rosé

Grape variety: 100% Nebbiolo.

Vine traning system and density: Guyot, 4800 vines per ha.

Altitude: 330 m above sea level.

Harvest Time: manual end of September.

Winemaking: after a few hours of maceration on the skins, the most is separated and cooled before alcoholic fermentation takes place at an average temperature of 16°C.

Ageing: the wine is aged in stainless steel vats for a few months and bottled in the following spring.

Characteristics: The wine is a soft cherry -red in colour, the perfume is fresh and pleasant with violets and fruit notes, including raspberry, strawberry.
The flavour is dry, delicate, elegant and well-structured, on the palate the wine is balanced and distinctly fresh, with fine tannins that contribute to its long finish.

Food pairing: Sot Rosè makes an excellent aperitif and is ideal for matching with starters and pasta courses, as well as with all types of pizza; thanks to its softness and its restrained but perceptible acidity, it is delicious with fish, fresh cheeses and vegetable dishes.
Best served at 10-12°C. Although the characteristics of the Nebbiolo ensure quite a long ageing to enjoy its fragrant perfumes we suggest drinking Sot Rosè quite young, in the first 2/3 years.

Grape variety: Arneis, Favorita, Chardonnay.

Vine-Training system: Guyot and spurred cordon.

Altitude: 330 above sea level.

Harvest Time: September.

Winemaking: fermentation is for about 12 days at 16°C. The wine remains for 4 mouths on the fermenting yeasts before being bottled.

Ageing: for two mouths in the bottle.

Characteristics: made from vineyards situated in the Region. Straw yellow in
colour, it has an aromatic bouquet with a hint of citrus and exotic fruit. The taste is fresh and graceful.

Food pairing: best served with hot and cold starters, excellent with all types of fish and crustaceans.
