Ardé

ABOUT THE VINEYARD
The grapes are hand-picked from our estate vineyards, which we carefully manage with the objective of obtaining distinctive, quality-rich base wines for our sparkling wines. 
WINEMAKING
The clusters are pressed gently and progressively, yielding several must fractions; the must is fermented in steel with cultured yeasts.

In the spring, the wine is given the liqueur de tirage; it then re-ferments in the bottle and matures sur lie for 18 months before being disgorged. 
TASTING NOTES
A very different sparkling wine, Ardé, whose very appearance presages its qualities, with a soft, seductive bead that promises an ultra-smooth palate, both in texture and flavour. Its true hallmark is its rich, complex mosaic of fragrances, including crisp apple peel and yellow plum, refined hints of roasted nuts and fresh-baked bread, chamomile blossoms and honey, and talcum powder and subtle peppery notes of mint and medicinal herbs.

It is perfect as an aperitif wine, but delicious as well when paired with fried vegetables and raw seafood. The adventuresome will want to try it with citrus-laced sponge-cake Bavarian !

Fornaci

ABOUT THE VINEYARD
Hillside vineyards in the Tassarolo region.

A stylish, graceful wine, far from commonplace. Floral nuance of hawthorn and lily complement fruiter notes of banana, followed by subtly pungent citrus, hay, and mint. Beautifully balanced on the palate, it concludes with a tasty, fruit-edged finish enlivened by a refreshing crispness. The ideal wine to enjoy every day, or as often as you wish. Serve in tulip-shaped glass at 10° C. Vineyards, with any of our property are located in the municipality of Tassarolo; their name derives from the brick furnace that once stood there. This also explains the highly clayey nature of the soil.

WINEMAKING
The grapes are transferred to the cellar immediately and undergo soft pressing to extract the very best from the fruit. Fermentation takes place slowly at a controlled temperature (18-20°C, to maintain the typically rich aromas of the Cortese di Gavi varietal) and lasts for up to 20 days. The wine is bottled in february or March to allow a minimal ageing, period in bottles before the wine is sold, and to make sure it reaches a certain level of maturity and balance.

TASTING NOTES
Those looking for an intriguing Gavi with great finesse and ideal balance can do no better that Fornaci, with its fruit-rich and floral bouquet beautifully, both elements so melded together as to be scarcely separable, their marriage made even more seductive by smooth notes of candied almond and beeswax. In the mouth it is compact, spherical, and harmonious, very much in line with the bouquet, and it concludes with a lengthy, cleanly-delineated finish.

Ideal with first courses of vegetables and fine fish in simple preparations, it is wonderful as well with minced meat served raw.

Salluvii

ABOUT THE VINEYARD
Hillside vineyards in the Gavi area.

This is what is commonly defined as the winery’s “basic wine”. Vineyards are located in different municipality and come from different kind of soils. The meaning of Salluvii is the ancient name of people who lived in the Gavi region in the past.

WINEMAKING
The grapes are transferred to the cellar immediately and undergo soft pressing to extract the very best from the fruit. Fermentation takes place slowly at a controlled temperature (18-20°C, to maintain the typically rich aromas of the Cortese di Gavi varietal) and lasts for up to 20 days. The wine is bottled in february or March to allow a minimal ageing, period in bottles before the wine is sold, and to make sure it reaches a certain level of maturity and balance.

TASTING NOTES
Fragrance. This is the primary quality of Salluvii, a delicious, self-confident wine with youthful notes of bananas and jasmine, face powder and spun sugar. Its supple palate echoes the fragrances on the nose, in a slightly crisper manner.

Salluvii, lively yet not sparkling, is the perfect wine to open a meal, but it continues as a perfect partner to fish preparations, particularly in summertime.

Castellari Bergaglio’s history is that of a family who decided to dedicate their time to wine production in the late 19th century. The winery’s objective has always been to make wines whose features are unmistakeably linked to the terroir, and to achieve this attention is focused on the Cortese grape variety, emblematic of the Gavi production zone.
