For us, the definition of “wine” is a combination of climate, soil, and grape variety. Our winery has 100 hectares of owned vineyards, where we practice a viticulture based on this principle.
We care for the vineyards delicately, allowing climate and soil to imprint their character, that we will later taste in the final result. The strong temperature contrasts between day and night provide a great sugar/acidity balance.
The soils features contribute by favouring a good aeration and drainage during the rainy seasons, at the same time that the underground clay contains humidity reserves for drought years. In this magic alliance the sun is in charge of governing all, he takes over the rest until the harvest.
