Pignoletto DOC semi-sparkling dry

PRODUCTION AREA: Modena province complete area and part of the Bologna province.

VINES: at least 85% Pignoletto, 15% Trebbiano and other vines grown in the hills.

VINIFICATION: soft-pressing, immediate draining, cold fermentation without skin contact.

STORAGE: refrigerated stainless steel silos.

SECOND FERMENTATION: autoclaving (Charmat process) temperature controlled.

BOTTLING: isobaric bottling, after sterile filtration at ambient temperature.

ALCOHOLIC CONTENT: 10,5%. Shows a sugar residue of around 10 g per liter.

NR. OF BOTTLES PRODUCED: 70.000

PACKAGING: bottle Champagnotta Emiliana, 750 ml; sparkling wine cork; boxes of 6 bottles.

ORGANOLEPTIC FEATURES

COLOUR: light pale yellow with greenish shades.

FRAGRANCE: agreeable white fruit hint, soft and distinct.

TASTE: sparkling, light bodied and persistent, fresh and round, bitterish at the end.

SERVING TEMPERATURE: 10-12°C.

ADVICE: suitable for fish and main courses.

PRODUCTION AREA: hills and foothills area of the southern parts of Modena province.

VINES: 100% Lambrusco Grasparossa di Castelvetro.

VINIFICATION: soft-pressing, maceration and cold fermentation.

STORAGE: refrigerated stainless steel silos.

SECOND FERMENTATION: autoclaving (Charmat process) temperature controlled.

BOTTLING: isobaric bottling, after sterile filtration at ambient temperature.

TASTE: dense and persistent, sparkling dry. Shows a pleasant balance in its body. Fruity taste fresh and harmonious.

SERVING TEMPERATURE: 13-15°C.

ADVICE: suitable for main courses, pasta, roasted meats and cheeses.

The Motor Valley is still preserving a natural setting, where traditions and old flavours revive, such as: the Lambrusco, a "par excellence" wine typical of the hills of Modena, a land that has been devoting to agriculture and wine cultivation from time immemorial.

"Cantina di Formigine" was established in 1920 by 49 local grewers. The work started by those pioneers has never been broken off and, just after a century, the Company has turned into "Cantina Formigine Pedemontana", a modern concern set up by merging the Cantina Pedemontana of Sassuolo, formed by 420 partners, who grow rare grapes on an expanse of 600 hectares of vineyards, 60% of Lambrusco Grasparossa di Castelvetro DOC.

The new factory has been conceived through forefront solutions, but without leaving out the tradition; a fusion of past and future thus combining the age-long experience of traditional wine-making and the refinement of a modern flavour.

A tasting point and a practical and functional wine-shop welcomes the customers and offers high-quality but cheap products.

Directly from the viticulturist to a custom, with dedication, abnegation and passion.
