Cuvée Perle Noire

This rich and elegant Blanc de Noirs Grand Cru ideally complements a cocktail party or a gastronomic meal. Its complexity proves a match for the finest delicacies.

TASTING NOTES
The colour is a rich crystalline gold. The nose opens up with notes of fig, prune and pineapple. On tasting, the wine is rich, fleshy and velvety. It is beautifully vivacious as well as vinous. It combines fruity roundness with minerality, leaving a hint of sea salt. Its taste is remarkably long and its freshness stupefying for a blanc de noirs.

Cuvée Signature

The cuvée Signature Grand Cru reflects the true identity of the house.
Its distinct aromatic structure is combined with the minerality of a great terroir.

TASTING NOTES
The nose combines aromas of stewed pears and vine peaches, with a touch of torrefaction and aniseed. The effervescence is creamy and smooth to the palate.
Red and yellow fruit aromas blend with a chalky minerality that brings up saline undertones.

THE STYLE OF OUR WINES
Time is one of the most important raw materials.

5 to 8 years of patience are necessary to elaborate our cuvées and bring them to maturity. Going much beyond conventional practices, this long rest in our cellars reveals the structure of the wines, refines the effervescence, and contributes to their complexity.

This complexity is also derived from the blending of a large aromatic palette coming from the vinification in oak barrels and stainless steel, with special focus on reserve wines.

The best plots are vinified in oak barrels from Burgundy, which bring an additional organoleptic profile during the blending. These wines enrich the noblest cuvées of the House.

The reserve wines constitute the true treasure of the domain, as they guarantee the continuity of style of the cuvées. The selected wines, which always are of great quality, are conserved in very large stainless steel vats so as to preserve their freshness over time. Via a system of perpetual rejuvenation, many years of harvest accumulate in the same vat. The wealth of old wines blends with the dynamism of the wines from the current year.

From this know-how are born rich and racy cuvées, with the expression of the terroir weaved into their fabric.
During the tasting, the nose is expressive, intensely assertive. In the mouth, the champagnes are fleshy, rich, often with a creamy texture highlighted by a mineral salinity derived from our chalky soils.
