Sparkling wine: Conegliano Valdobbiadene Prosecco Superiore D.O.C.G.

Vine: Glera 100%
Soil characteristics: land with morain origins. Deep, clay-rich, heavy.
Training system: Guyot / Double inverted 3.300 strains/Ha
Harvest: by hand in September.
Vinification: 50% cryomaceration of pressed grapes for 18 hours a 6 °C, 50% pressing whole grapes.
Maturation: steel.
Sparkling wine process: Charmat method with at least 45 days of foaming.
Sugar residue: 15 gr/l
Perlage: fine and persistent.
Colour: brilliant straw-yellow.
Aroma: a pleasant note of white acacia flowers, with a hint of fruit – mainly pear, and apple not yet ripe.
Taste: dry, intensely fruity and harmoniously combined with a white florarl bouquet, enjoyable and persistent. Dry on the palate with a strong invitation to further tasting.
Gastronomic matches: from the beginning to the end of a meal with fish or chicken, risotto, soups, salami and ham. Excellent as an aperitif.
Alcohol: 11,50% vol.

Gastronomic matches: excellent with appetizers and fish dishes, but also desserts.

Borgo Antico is a family owned winery in the hills of Conegliano Veneto, a land with moraine origins and a clay-rich core, which has always been devoted to the cultivation of the vine, giving its wines delicate fragrances and particularly determined aromas. The adventure began in 1973 when Mr. Marchesin Vito decided to produce local wine, involving his entire family, but mainly his son Leonardo, who has always accompanied him in the vineyard since childhood, therefore absorbing the atmosphere, and learning the secrets of a fascinating world. This is how Leonardo began his career as oenologist, and how since 1995 has taken over the company now owning 15 acres of land and producing 70,000 bottles of wine per year. The most widely grown variety, namely 80% of total production, is the Prosecco, this is the CONEGLIANO-VALDOBBIADENE PROSECCO SUPERIORE DOCG and other autochthonous such as Marzemino and Verdiso, while the rest is represented by Merlot, Cabernet and Chardonnay.
