CASTELLO DI BOLGHERI - DOC BOLGHERI SUPERIORE

Castello di Bolgheri is a selection of our best vineyards placed around the castle.

THE VINIFICATION
The wine remains in contact with the skins for approximately 25 -30 days.
We take care on every details during the process : from the vines with a small yield and the search of the perfect timing
between each moment until the harvest, when tannin is mature and acidity present with an flavor of complete and crisp fruit.

VARVARA - DOC BOLGHERI

The name  Varvàra was chosen in honour of Baroness Varvàra  Wrangel, spouse of Count Ugolino della Gherardesca and  grand grand mother of the present - day owner Federico Zileri.
Varvàra was created out of the desire to produce a wine with  a direct appeal, with its fruit up - front. A younger, highly
drinkable wine, in which we look for a generous, though precise bouquet as well as elegance.

THE HARVEST
The grapes are harvested manually, with selection on the  vineyard and as well before destemming.
THE VINIFICATION
delicate treatment of pumping over and delestage, a concept to extract softly the precision of the fruit and clear tannin.
The wine remains in contact with the skin for approximately  20 - 25 days. Fermentation takes place in stainless steel tanks at a controlled temperature.

About us

Company details

The Castle’s Cellar is in the town of Bolgheri, in Via Lauretta 7. The cellar was completed in 1796 and consists of two floors.

The first floor is on the street, and is divided into an area for making/aging the wine, where the renovated cement tanks are located, in which the wines are aged after having passed a period of time in wood.
This floor also contains the Farm’s wine store, where visitors can taste and purchase Bolgheri Castle wines and Olive Oil, and visit the cellar by appointment.
The lower floor is a basement area divided into an area for making the wine, which contains steel vats at a controlled temperature, and an area for aging in wood casks, where the barriques are set.
