Castel Giovanelli - SAUVIGNON DOC 2012

"The physical sensuality of a pleasure garden pervaded by hints of the wild. Lose your senses in a labyrinth of fragrances and find them again thanks to the thread of minerality that leads you to your gustatory goal."

Age of vines: 15 years
Temperature: 12 – 14 °C
Age-ability: 2015 – 2021
Yield: 45 hl/ha
Vine training: Wire-trained
Alcohol: 14,0 %
Residual sugar: 3,0 g/l
Tot. Acidity: 6,0 ‰

VINTAGE
After a very dry, warm winter, spring saw the earliest appearance of shoots on the vines in the history of modern winegrowing in South Tyrol.
The relatively cool months of April and May then caused a delay in the vegetation phases. The beginning of summer was somewhat cool and damp, providing sufficient precipitation for an optimal start to the ripening phase. The ripening process was also positively influenced by a very warm and dry August. The autumn weather was very fine at the beginning of the harvest, with just a few rainy days during the whole picking process, allowing all grape varieties in every type of location to develop in the best possible way. The 2012 white wines are of exceptional quality, with fine fruit and acidity and a harmonious structure.

VINIFICATION
Extremely prolonged pressing of the grapes in their entirety, spontaneous fermentation of the unfiltered juice in the large casks (500 l), 10 months maturing in the wood on fine lees with bâtonnage.

VINEYARD
East-facing slope at 500 meters above sea level, loamy, chalky gravel with porphyry and weathered granite, providing a prominent mineral character to the site. South-facing slope, 350 m, chalky gravel soils.

TASTING NOTES
– golden yellow with hints of green
– fruit reminiscent of ripe gooseberries, apples and peaches
– juicy, with elegant fruit on the palate, mineral notes and a melting finish

RECOMMENDATION
This wine is paired well with asparagus, onion soup, escargot, and fish dishes, and may also be enjoyed as an aperitif.

VIAL - PINOT BIANCO DOC 2015

"Echoes of the sea trapped in the vineyard’s limestone soil return on the savoury-edged back palate."

Varietal(s): Pinot bianco
Age of vines: 10 – 30 years
Temperature: 10 – 12 °C
Age-ability: 2016 – 2021
Yield: 60 hl/ha
Vine training: Wire-trained
Alcohol: 13,5 %
Residual sugar: 2,5 g/l
Tot. Acidity: 5,6 ‰

VINTAGE
Summer 2015 was characterized by higher than average temperatures and lack of rainfalls. The weather situation induced us to an early harvest epoch thoughts. The heat, however, did slow the grapes development therefore we had an average harvest’s epoch which began on September 1 and ended on October 27. We immediately recognize the potential of an absolutely promising vintage when we saw the grapes quality brought to the cellar. The whites wines show enveloping and caressing fruit features.

VINIFICATION
Whole-cluster pressing of ripe and healthy grapes, natural must clarification, slow fermentation at a controlled temperature of 16-18 °C (20% in the large casks), 5-month ageing on the fine lees, filtration and bottling in March.

VINEYARD
East-facing slope at 500 to 550 meters above sea level. This vineyard, located at the foot of the Mendel Mountains, has optimal conditions during the ripening period for fruit-focused white wines. Sunny days, which are not too hot, and cool nights, which build fruit character and preserve acidity; loamy conglomerate soils with chalky gravels and porphyry sand.

TASTING NOTES
– brilliant yellow
– a nose of pears and ripe Golden Delicious apples, with undertones of flint and hazelnuts
– a fruit-dominated palate, with a delicious, balanced acidity, lingering finish

RECOMMENDATION
This wine pairs well with light appetizers, fish dishes and also as an aperitif.
