The carefully selected grapes after being picked from the bunch are put to steep for about 8-10 days at a controlled temperature. Steeping is made in stainless steel basins. The rapening of the wine that mainly takes place in stainless steel basins is then completed by a 5-6 months stay in barrique and then for further three four months sharpening in bottle.

The wine factory Madaudo was created in 1945 e for two generations the owners selected and bottled typical Sicilian products. As time went by the firm developed increasingly and today it has two factories situated in Villafranca Tirrena and Larderia two suburbs of Messina. Thanks to modern equipments and a huge production (about 9 millions of bottles) Ivam wine factoy is the third biggest in Sicily (as written by Osservatorio Vitivinicolo Siciliano 2008). In the last months of 2009, the brothers Alfio and Andrea started, together with the commercial and technical staff, a process aimed to transform the factory and increase the quality of the products paying attention to the market trends and the customers’ wishes. So, Cantine Ivam was created, that is an association of selected wine producers and vineyards, more than 300 hr of grapes that can be found all over Sicily. There, with severe criterias, typical IGT Sicilia, DOC Sicilia and DOCG Cerasuolo di Vittoria are produced. A professional staff made by agronomists and aenologists grants the quality. Today the wine factory produces different brands of wines, IGT, DOC, DOGC, sparkling wines and “spumanti”.
