AMARONE della VALPOLICELLA Classico

Only the best and carefully selected Corvina, Corvinone, Rondinella and Molinara grapes are used to make the most famous Valpolicella wine. After harvesting, the grapes are put to rest in the loft of the cellar for about three months. The crushing takes place towards the end of January, the fermentation is very long and slow, at controlled temperatures. The aging takes place in oak barrels, followed by a brief passage in steel vessels before bottling. The colour is dark ruby red and bright, with purple hues when young; the aromas are complex and enveloping, reminiscent of cherries, raisins, dates and sweet spices. This wine tastes warm, round, soft, with a clean finish. Its balanced structure makes it suitable for mature cheese, game dishes, roasts and also stuffed or grilled meat.

RECIOTO CLASSICO DELLA VALPOLICELLA

This traditional sweet red wine from Valpolicella is born from the ripest Corvina grapes and bunches of Corvinone, Rondinella and Molinara grapes, chosen in the vineyard and harvested by hand in small boxes. The drying takes place in a fruit cellar, under natural conditions. After crushing, the slow fermentation at low winter temperatures is interrupted before Yeasts have transformed all the sugar of the grapes into alcohol, so as to obtain a still sweet wine with a measured alcohol content (13-14 degrees). Aging takes place in oak barrels. The final wine thus shows a very dark ruby colour with garnet hues: The aromas are of red fruit in spirits, dried fruit and dried figs. This wine is sweet but not cloying, balanced, with silky tannin, long and clean. The Veronese tradition recommends combining it with dry cakes like shortbread or Pandoro, but you can try to drink it cold as an aperitif, or at ambient temperatures with a few pieces of dark chocolate.

Valpolicella Ripasso Classico Superiore

Valpolicella Ripasso Classico Superiore: Corvina, Corvinone, Rondinella and Molinara also form the blend of this wine, made with the "pass back" technique: after manual harvesting, crushing and fermentation, the wine Valpolicella thus obtained is passed back through Amarone marc; in this way it triggers a second fermentation that gives the final product more structure and more intense perfume. The colour is dark ruby, the aromas reminiscent of the very ripe red fruits and field herbs, the taste is still fruity but dry, rich and round, and with a long finish that makes it suitable to classic risotto with sausage, to pasta with meat sauce and red meat.

Rosso Veronese IGT ''El Boteghin''

This wine comes from a blend of wines from two different years: the first collection is from 2008, which was joined with the 2009 wine. The grapes are Cabernet Franc, Sangiovese, Rebo and Teroldego (for a total of 40%) and the remaining 60% Corvina, Rondinella and Corvinone. Dried for about 3 months, they are then fermented in steel vats and aged both in barrels and American oak barrels for 6 months. From the glass where a beautiful dark ruby colour is presented, sweet scents of red flowers emanate, while the taste is reminiscent of the small red bramble fruits (raspberry, mulberry). The combination is recommended with all red meat and seasoned cheeses, and for those who dare, even with dark chocolate.

Az. Agr. CROSAROLA is located in the heart of Valpolicella, in Casterna district of Fumane, the Crosarola company is a young company with behind a solid family tradition of viticulture and wine production in small quantities for the family needs.
Since 2000 Sebastiano Righetti took over the baton from his father and maternal grandfather and personally cultivates its vineyards, hills and all places in the municipality of Fumane, in the area historically known for the quality that they have given the grapes: area, below range , Casterna, Creari. The soils are mainly limestone -cartacei, medium texture in Sotto and Casterna .Creari Campo and in fact a word of Veronese dialect that indicates a particular type of yellow clay.
The grapes grown are typical (native) of Valpolicella: Corvina, Corvinone, Rondinella, Molinara, Oseletta. To these are added a few rows of Cabernet Sauvignon and Rebo, a Trentino vine, born from 'cross between Teroldego and Merlot.
The agronomic experience Sebastiano allows the cultivation of vineyards traditional but with a focus on environmental care.
The grapes for the wines that carry the brand Crosarola are therefore only the best of each vintage harvested and selected by hand.
Subsequent operations vinification and aging of wines are held in the family winery, equipped with the technology to 'avant-garde.
Here it is also a small tasting room, always ready to welcome lovers of the most authentic wines of Valpolicella Classica.
