 Our traditional method sparkling wine aged on lees for 5+ years in bottle before disgorging in Spring 2016. 100% Chardonnay with low press yields then fermented & aged in neutral oak barrels prior to blending and tirage in Spring 2011. Dosage of 12g/L to maintain balance of acidity & retain freshness.

    Winemaker Notes:
    The 2014 vintage provided us with very high quality Pinot Noir grapes, although in a sligthly smaller quantity than the previous few seasons. This 'natural selection' thanks to the winter weather means the vines have fewer grapes to ripen and can provide a nice core of fruit concentration in the finished wine. This 'Estate Pinot Noir' is a blend of the 7 different blocks of this varietal we farm annually. The oak is used to frame the wine meaning that 15% new oak is plenty to showcase the fruit notes. Our goal every year is to make a Pinot Noir that is expressive, fresh, vibrant and pure.

  • Winemaker Notes: Our Rusty Shed Chardonnay bottling is an expression of our best parcels of Chardonnay and our best barrels. The fruit is whole bunch pressed to yield only the purist juice then gently rolled to barrel for fermentation. In 2013 the fermentation took up to 3 months. A decision was made in the winter whether to inhibit the secondary malolactic fermentation or to let the wine evolve further. Barrel selections for the final blend were made in summer 2014, and then the wine was racked off lees & blended in July before bottling in September 2014.

The Gravity bottling of Pinot Noir is designed to showcase the 'best of the best' in our vineyard and cellar. With a very good crop of fruit in 2013, we were able to have an even greater selection of Pinot Noir fruit to choose from and more barrels of wine to select for our top Pinot Noir blend. The end result is a wine that is very subtle in its oak profile in order to showcase the sweet & savoury notes of Pinot Noir. The core of fruit is balanced with some use of stems or whole clusters in the fermentation vat. We are always looking to craft our iconic wines to showcase fruit purity with nuance and elegance. This is how we feel we can best express the terroir of our Twenty Mile Bench vineyard.

Winemaker Notes:
The 2015 Riesling is a wine made from 100% estate farmed fruit, primarily from a single block of Riesling planted in 2004. The fruit was harvested by hand between September 25 and October 5, providing us with diversity in flavours. Some of the crop was whole cluster pressed and some was crushed gently before pressing. The juice was fermented exclusively in stainless steel tanks at cold temperatures to retain the varietal aromas. In order to retain natural sweetness to balance the bright acidity, fermentation was stopped after 3-4 weeks. The final blend was assembled in January 2016 and the wine bottled in March.
