It is the "classico" coming from the hill production of the local variety.

SITE: Monteforte d'Alpone and Soave
SURFACE: selection on 25 hectares
ALTITUDE: from 100 m to 200 m asl
EXPOSURE: South/ South-west/ South-east
SOIL CHARACTERISTCS: Basaltic lava
CANOPY SYSTEM: Pergola
DENSITY: 3000-3500 plants / hectar
AGE OF THE VINEYARD: > 30 years
HAND PICKED
Annual production: about 200,000 bottles/year

ENOLOGY
Destalking and crushing. Skin contact for 4 - 12 hours followed by pressing. Cold settling for 12 - 24 hours at cold temperature. Fermentation in stainless steel vats, followed by malolactic fermentation. Racking and maturation in stainless steel for about 8 months.

IMPRESSIONS
Light yellow colour. Elegant nose of sweet field flowers: camomile, elder flower, iris. Mineral on the palate with sweet almond on the finish.

RECOMMENDED COMBINATION:
Risotto and white fish, raw fish, salads.

SERVING TEMPERATURE: 8 - 10°C

VIGNETI DI FOSCARINO

Our interpretation of the Soave Classico looking back to past times. A selection of grapes coming from the old pergola vineyards located on the East side of the Monte Foscarino, used barriques and minimalist oenology.

CHARACTERISTICS OF THE VINEYARD:
SITE: Monteforte d'Alpone and Soave (monte Foscarino)
ALTITUDE: from 100m to 200m asl
EXPOSURE: South/ South-west/ South-east
SOIL: Basaltic lava
TRAINING SYSTEM: Pergola
DENSITY: 3000 - 3500 plants/hectares
AGE OF THE VINEYARD: >40 years
SURFACE: selection on about 10 hectares
HAND PICKED
Average production: about 30,000 bottles and 520 magnums

ENOLOGY
Destalking and crushing are followed by skin contact for 8 - 12 hours. After the grapes are pressed the must is allowed to settle for 12 - 24 hours at cold temperature. Alcoholic and malolactic fermentation take place in barriques not new. Prior to racking, batonnage is carried out every 4 weeks for about 6 months. Fining for 6 months in stainless steel vats, filtration through a coarse filter occurs prior to bottling.

IMPRESSIONS
Intense yellow colour. On the nose there is honey of sweet field flowers such as camomile, elder flower, iris. Large and mineral on the palate with a finish of sweet almond.

RECOMMENDED COMBINATION:
Baccalà with polenta, fish soup, risotto.

ENOLOGY

IMPRESSIONS
Light yellow colour. Great aromatic vigour with an intense nose of apple and citrus. On the palate the wine is well structured with nose of apple, pear and banana. Fresh and persistent finish.

RECOMMENDED COMBINATION
Aperitif, hummus, lobster, wild strawberries.

CARMENERE PIU'

Più’ means ‘more’ in Italian and there’s more than just Carmenere in this typical blend from the Colli Berici, a line of gently rolling volcanic hills in Italy’s north-east. Merlot is a civilising influence, the plumy accent and refined tannins marry well with a touch of French oak. The iron-rich clay soil over a limestone base is perfect for Bordeaux varieties and Carmenere, introduced in the 19th century, suffered from amnesia for decades. Cabernet Franc it most definitely is not – the soy sauce, cocoa and grainy tannins ought to have been unmistakeable.

EXPOSITION: south
SOIL NATURE: iron-rich clay over limestone

VINEYARD AGE: from 10 to 42 years
AVERAGE YIELD: 50 Hl / ha
HAND PICKED
Annual production: 80,000 bottles

ENOLOGY
All varieties are 100% destemmed. After 12 days' maceration in upright stainless fermenters with internal paddles the must is racked and malo occurs in steel. The wine is aged in 2nd ­fill 225l French oak barriques for 12 months. A fi­nal racking is followed by a gentle pad ­filtration before bottling. The wine is unfi­ned.

IMPRESSIONS
Vivid ruby core with a narrow purple rim. Pronounced nose with black cherry, damson, soy, cocoa and Parma violet. Elegant front-palate with fresh acidity, firm, integrated tannins and length.

RECOMMENDED COMBINATION:
At its best with local salami (sopressa, sopressa with garlic and Val Liona DOP ham) and grilled pork.

HAND PICKED

Annual production: 26,000 bottles and 500 magnums.

ENOLOGY
After destalking and crushing, maceration in vertical steel vats for 12 days. The wine is transferred to new french oak barriques (50% allier, 50% nevers) where malolactic fermentation takes place followed by 15 months of ageing.
The wine is then racked, unfined and lightly filtered.

IMPRESSIONS
Deep red colour. The nose displays an intense bouquet of red and black fruit, dried cherries, cocoa and vanilla. It is soft and round on the palate with generous and balanced tannins and acidity. Persistent.

RECOMMENDED COMBINATION:
Barbecue, meat grilled on olive wood.

Sourced from a selection of the best grapes grown exclusively in our Carmenere vineyard situated beside the Oratorio di San Lorenzo in Località San Germano dei Berici (Vicenza). The Colli Berici is now considered one of the best areas for this grape variety in the world.

CHARACTERISTICS OF THE VINEYARD:
SITE: San Germano dei Berici (VI)
ALTITUDE: 50 - 100 metres a.s.l.
EXPOSURE: South
SOIL: Marl over limestone
TRAINING METHOD: Single Guyot
DENSITY: 5000 plants/ha
YIELD: 25 hl/ha
HARVEST: Manual
SURFACE: 7 hectares
HAND PICKED
Produced only in favourable vintages.
Number of bottles: varying from 5,000 to 10,000.

ENOLOGY
Maceration and fermentation for 14 days in upright stainless fermentors with selected yeasts. Malo in tank, then racked into 50% new and 50% one year French oak barriques. Matured for 18 months in wood before a light filtration and bottling. The wine spends a further 12 months in bottle before release.

IMPRESSIONS
The grapes, dried slightly on the plant, bequeath a deep, almost opaque, carmine red colour and concentrated nose of black fruit, cocoa, pepper and soy. Authoritative in the mouth, it shows superb balance with ripe tannins and a round, generous finish of rare length.

RECOMMENDED COMBINATION:
Polenta and sopressa vicentina D.O.P. , grilled or smoked pork.

We are a family who has been producing wine for more than forty years as our only activity. Now, at our third generation, we have a well-defined project: to produce different wines whose only aim is to represent our vision of the land, despite the styles and trends of the moment. Our agricultural system is organic because we think it yields better fruit, but we do not include this on our label. We believe in wine that generates emotions, preferably at “blind tasting” and, in order to do this, we have developed our own
know-how without consulting experts and wine gurus. We believe in everyday living and oenological minimalism, respecting the winemaking good practices that have lain the foundations
