Alba de MIROS Verdejo

Grapes
Verdejo.
Harvest
The grapes are harvested at its optimum maturity stage, protected by the cool of the night using a mechanical harvester for preserving its freshness.
Elaboration
Once in the winery, we proceed to lightly press the grapes at low temperature on an inert atmosphere.
Fermentation
The obtained juice from the press ferments in stainless steel tanks for more than 20 days at a temperature of 15º C.
Once the fermentation is finished, we proceed to make a “sur lies” ageing, during 2 months, for increasing its complexity.
Tasting notes
It shows a brilliant straw yellow color. Fresh, intense and complex nose, showing tropical fruits, some citric notes and a bottom of freshly baked bread note in the background, from the ageing with its less. It is fresh and velvety in the mouth with a lingering and rounded finish.

Rosa de MIROS

Grapes
Tinta Fina (Tempranillo), Cabernet Sauvignon and Merlot.
Harvest
The grapes are harvested at its optimum maturity stage, protected by the cool of the night using a mechanical harvester for preserving its freshness.
Elaboration
Once the grape is in the winery, it is passed through a grain sorting table, and therefore they are softly de-stemmed and slightly crushed.
Maceration
We macerate the grape- juice in contact with the skins, until achieving the desire level of color for 18/26 hours.
Fermentation
The must obtained is fermented in the Stainless Steel tanks for 20 days at a temperature lower than 18ºC.
Tasting notes
This Rosé wine has an appealing nose and it’s fleshy in the mouth. It has a Cherry red color. It shows wide and complex in the nose, combining red fruits aromas, together with the herbal notes of Cabernet Sauvignon. It is deep and complex in the mouth, gentle with a very well integrated acidity.

Malolactic – It is conducted in Stainless Steel tanks, with its fine lees and we do a gentle battonage for increasing the volume in the mouth.
Tasting notes
It shows an intense purple color with violet hues, clean, lively and brilliant. Very fresh mouth dominated by very intense aromas typical from the Tempranillo Grape (red wild berries, nuances of blackcurrant). Balanced and rounded in the mouth, with some final notes of gummy jelly.

French Oak Barrels for 24 weeks.
Tasting notes
Deep red cherry color with violet rim. Fresh nose, with wild berries and dark fruits aromas. The oak is very well integrated, providing high toast coffee notes that show a soft aging in oak barrels. In the mouth, it tastes rounded, powerful and elegant.

With a beautiful red cherry color with ruby rim. It has a very elegant nose with mineral notes, balsamic, blackberries, raspberry and spicy notes from the wood. Lively in the mouth with a very good structure. The wine has a long finish, fleshy and elegant in the mouth.

SILENCIO DE MIROS

Grapes
Tinta Fina (Tempranillo) from Rafael’s Vineyard.
Harvest
Late harvested, usually in mid-October, hand-picked using 12 Kg. cases that rest on a refrigeration chamber 48h. below 7ºC.
Elaboration
Once in the winery, the harvest passed through a sorting table and we do a gentle desteming.
Fermentation
Alcoholic - Fermentation takes 12 days at a controlled temperatura of 26 ºC in truncated-cone stainless steel tanks of 17.000 Kg. We do a cold soak for 52 hours on an inert atmosphere for a better extraction of the fruity aromatic compounds of the grape.  
Malolactic - It remains in new French oak barrels of 500 and 225 l. with its fine lees. We do a gentle battonage twice a week.
Barrel
Depending on the characteristics of the vintage, our oenologist determines the time of permanence in barrel always looking for balance, elegance and maximum respect to the soil of our vineyard of Raphael.
Tasting notes
Deep red cherry color with violet trim. It shows fresh aromas in the nose, combining red currant, plumbs and raisins. Also displays some light hints of violets and truffles. Very well integrated aromas with a background of mild coffee toast and light touches of spiciness after being aged in French oak barrels. Powerful, elegant and lively in the mouth, followed by a light astringency typical of this vineyard.

Tasting notes
Pale yellow, brilliant with reflexes green emerald. Fresh and intense nose of great complexity that develops as the wine breathes, showing minerals notes together with some cinnamon hints, vanilla and honey, that remarks its barrel ageing with its lees. It is fresh and tender in the mouth with a rounded finish, and its fleshiness and unctuousness incite us to keep enjoying it.

Ferments during 12 days at a controlled temperature set at 24 and 28ºC, in truncated cones stainless steel tanks of 17.000l. of capacity and we extend the post-fermentative maceration to 30 days or even more.
Malolactic – It remains in the tanks with its fine lees during 30 days, and we do a gentle battonage for increasing the volume in the mouth.
Barrel
We use French oak barrels medium and medium low toasted, for not covering up the essence of this modern reserve. Aged in French Oak Barrels for 18 months.
Tasting notes
Deep cherry red color with a light golden rim outlines the glass. In the nose shows dark ripe wild fruits aromas with spicy and balsamic hints. In the mouth is fleshy and lingering, with the elegance and power typical from our Ribera del Duero.

Tasting notes
Pale straw yellow colour with greenish hues. In the nose it is complex and intense with a strong presence of the hay aromas characteristic of the Verdejo variety, which give way to subtle notes of white flowers and white fruit such as apple. Elegant, intense and fatty, with strong acidity and bitter finish characteristic of the variety.

The grapes are harvested at its optimum maturity stage, by hand using 15Kg cases.
Elaboration
After a previous selection of grapes at the vineyards, once in the winery, it is passed through a grain sorting table, and therefore they are softly de-stemmed and slightly crushed.
Fermentation
Alcoholic – We make a cold soak for 24h. in an inert atmosphere for a better extraction of fruity aromatic compounds from the grape.  Ferments during 12 days at a controlled temperature set at 28ºC, in truncated cones stainless steel tanks of 17.000L. of capacity and we extend the post-fermentative maceration to 25 days or even more.
Malolactic – It remains in the tanks with its fine lees during 45 days, and we do a gentle battonage for increasing the volume in the mouth.
Barrels
Aged in French and American Oak Barrels for 15 months.
Tasting notes
Intense black-cherry colour with good depth of colour and hardly any signs of evolution. Very expressive aromas on the nose with notes of black pepper, with just a subtle hint of the long cask-ageing, thanks to its great complexity and ripe, concentrated fruit. The long, persistent finish leaves gentle balsamic reminders of the finest quality.

LA LIANTA

Grapes
Chardonnay.
Elaboration
Mechanical harvested during the night. The free-run must is obtained, after a gentle pressing and natural fining at low temperature. The fermentation, with only this free-run must, is managed in stainless steel tanks at a controlled temperature (between 14-15ºC), preserving the primary aromas (fruit and flowers) typical of the grape. The fine lees are stirred during several weeks. The wine is racked, stabilized and bottled while still young.
Tasting notes
Shows a brilliant yellow color with greenish reflexes. Medium-high aromatic intensity with very neat aromas. On the palate it is fresh and lingering, sharp scented, with hints of tropical fruits, sharp apples, and peaches.

It ferments at controlled temperature set at 16ºC in stainless steel tanks of 25.000 liters of capacity, favoring the extraction of fruity aromas from the grapes for 14 days.
Tasting notes
Red cherry aromas, clean and bright. Medium-high of aromatic intensity with red fruits, it shows a balanced acidity on the palate and releases its youth vitality. Ideal for pairing with pâté and pasta.
