Zinfandel Puglia IGT

GRAPES:
100% Primitivo

ALCOHOL:
14,5%

VINEYARD AREA:
The Primitivo grapes are selected form low-yielding vineyards in the Salento area of southern Puglia.
The traditional Alberello basso vine training method is employed.
The plants are an average of 40 to 50 years old, with a plant density of approximately 5000 plants per hectare.

HARVEST:
Manual picking in late August.

VINIFICATION:
After de-stemming, the grapes are not crushed, allowing them to remain intact, reducing damage to the skins and optimizing colour extraction. Fermentation takes place at a controlled temperature of 24-25°C for 8-10 days.
Frequent remontage and delestage are carried out in the early stages of fermentation in order to achieve soft extraction of aromas and gentle tannins. After racking, malolactic bacteria are added to induce malolactic fermentation.

AGEING:
50% of the wine for 12 months in American oak barriques.

WINEMAKER'S NOTES:
Intense ruby-red color, with a complex bouquet, reminiscent of cherries, blueberries, coconut and vanilla. The ageing in American oak adds a pleasant roasted and spicy aroma. In the mouth it is full-bodied yet smooth and elegant. The tannins are soft, supple and well balanced. The finish is long and lingering, with a burst of spice and bright fruit at the end.

PINOT GRIGIO IGT

GRAPES:
100% Pinot Grigio

ALCOHOL:
12%

VINEYARD AREA:
The grapes are selected from the finest low yielding vineyards in Veneto, northern Italy.

AGE OF VINES:
In average 20 years old.

PLANT TRAINING AND DENSITY:
The vines are all trained using the Guyot  method. Plant density is around 4.000 plants per hectare with a very low yield of 2 kg per plant.

HARVEST:
The grapes are carefully picked by hand in late August.

VINIFICATION:
The grapes are de-stemmed and softly pressed. The juice is then chilled to 12°C and left to rest for approximately 18 hours. Fermentation is carried out using selected yeasts at a controlled temperature of 18°C.

AGING:
The wine is left on its lees in stainless steel tanks for three months in order to maximise extraction of complex aromas.

WINEMAKER'S NOTES:
This Pinot Grigio has a lovely floral aroma, with masses of fresh fruit flavors on the palate and a rush of crisp citrus acidity, making it perfectly balanced and totally refreshing. An elegant style of wine which is ideal on its own, or with fish, seafood or poultry.

Fiano Salento IGP

GRAPES:
100% Fiano

ALCOHOL:
13%

VINEYARD AREA:
The Fiano grapes are selected from low-yielding, fully organic vineyards in the Salento area of Southern Puglia. These vines are trained in the spurred cordon system. The plants are an average of 10 to 15 years old, with a plant density of approximately 5.000 plants per hectare.

HARVEST:
The grapes are carefully picked by hand in end-August. Harvest only occurs during the early hours of the morning to ensure that the fruit maintains its freshness as it travels to the winery.

VINIFICATION:
The grapes are de-stemmed and delicately pressed. The must is then chilled to 12°C and left to rest for approximately 18 hours. The clarified must is then racked and placed in stainless steel fermentation tanks. Fermentation is carried out using selected yeasts at a controlled temperature of 18°C. Following the fermentation the wine is then left to rest on its lees for approximately 1 week.

WINEMAKER'S NOTES:
The wine is straw yellow in color, with an elegant floral aroma of mango, peaches and sage. On the palate is crisp and refreshing, with tropical notes and exotic fruit. The finish is incredibly well balanced, long and persistent.
