SAUVIGNON - Friuli Grave Doc

Production Zone: alluvial plain in Friuli - Venezia Giulia, west zone of
Friuli Grave Doc appellation, municipality of Porcia, locality Rondover.
Grape Variety: 100% Sauvignon.
Vineyards: spur cordon training system, 4.000 vines per hectare, yield 100 ql/Ha.
Harvest Period: I/II week of September.
Vinification: crushing and destemming, gentle pressing, white fermentation in stainless steel tanks at temperature controlled (18-20°C), aging in stainless steel vats in contact with the fine lees, bottling done after five months of harvest.
Alcohol Content: 12,5% by vol.
Aging potential: to be drunk immediately or to be kept up to 1-2 years.
Colour: light straw yellow colour with slight greenish hints.
Nose: broad, varietal, aromatic, with citric notes of grapefruit, yellow pepper, tomato leaf, sage and balsamic aromas.
Palate: rich, fragrant and aromatic, with natural acidity and a persistent and pleasant slight bitter aftertaste.
Food pairing: it is a fine match with asparagus and marinated fish. another fine combination to give the best of themselves is with lobster, salmon and sushi. Excellent with risotto with herbs.
Serving Temperature: ideal at 8-10°C.

NEXUS - Cabernet Sauvignon - Friuli Grave Doc

Production zone: alluvial plain in Friuli-Venezia Giulia, west zone of Friuli Grave Doc appellation, municipality of Azzano Decimo.
Grape variety:100% Cabernet Sauvignon.
Vineyards: guyot training system, 4.000 vines per hectare, yield 60 ql/Ha.
harvest period: I/II week of October.
Vinification: crushing and destemming, followed by approximately 15-20 days maceration of the skins in stainless steel tanks at controlled temperature (26-28°C); after racking, fermentation in oak barrels where it refines for about 16 months. The aging continues for 6-12 months in steel vats before the bottling. Finally refining in the bottle for 6 months.
Alcohol content: 13,5% by vol.
Aging potential: to be drunk immediately or to be kept up to 10-12 years.
Colour: intense ruby red with violet hues.
Nose: complex, intense and fascinating, in which blackcurrant, blackberry and raspberry notes can be distinguished, well balanced with delicate nuances of vanilla, liquorice, spicy aromas of cinnamon and cloves.
Palate: velvety, luscious and full-bodied, warm and captivating , with harmonious and round tannins, shows a well merged freshness with gentle notes. Pleasant and long aftertaste closing on tones of fruit and spices.
Food pairing: ideal with grilled roast meat and game such as roe deer, deer, chamois. Its full-bodied palate well accompanies hard cheeses as Montasio. Excellent with Sauris speck and Pitina of Val Tramontina.
Serving temperature: ideal at 20-22°C.

RONDOVER ROSSO - Delle Venezie IGT

Production zone: alluvial plain in Friuli-Venezia Giulia, west zone of Friuli Grave Doc appellation, municipality of Pasiano and Azzano Decimo.
Variety: 40% Cabernet Sauvignon, 30% Merlot , 30% Refosco d.p.r.
Vineyards: spur cordon training system, 4.000 vines per hectare,yield 80 ql/Ha.
Harvest period: IV week of September / I week of October.
Vinification: crushing and destemming, followed by prolonged maceration in thermo-controlled stainless steel tanks (24-26°C). Separation of the skin through soft pressing. After fermentation, the wine obtained by blending three different varieties and in different percentages, ages in steel tanks in contact with the lees for almost two years before bottling. In fact, to provide body and structure a small part is aged in oak barrels.
Alcohol content: 13% by vol.
Aging potential: to be drunk immediately or to be kept up to 3-5 years.
Colour: intense ruby red.
Nose: dry, soft and harmonious, authenticates the expectations originated through nose.
Palate: dry, fresh, elegant with a good acidity balance and a pleasant mild bitter aftertaste.
Food pairing: ideal as an aperitif accompanied by Pordenone meat- roll, it exalts red meat and semi seasoned cheese. Excellent with grilled liver and pasta with beans.
Serving temperature: ideal at 18-20°C.

Family and values

The story of San Simone is linked to the territory. At Rondover, between Prata and Porcia, in the most western part of Doc Friuli Grave and central part of DOC Prosecco, the company San Simone is the result of winemaking tradition and culture of our family, which is engaged in the business of wine grower for four generations. We chose the name San Simone for our wines and wine cellar in the memory of our origins. The very first and historic headquarter was in fact situated in via San Simone, Prata, opposite the fourteenth century church devoted to San Simone, where our great-grandfather decided to began his activity which is now been converted into a family residence.

Many changes have taken place over time.
But one thing which has not changed is our value system. Values: responsibility towards the reality in which we work, passion for work and transparency in our working system. These are the values which are timeless.

Were Valuable yesterday.
Are Valuable today.
and Will be Valuable even tomorrow.
