Masumi Sake was founded in 1662 near Lake Suwa, at the center of the Japan Alps in Nagano Prefecture. Masumi owes its quality to the region’s pure spring water, and to a local tradition of precision craftsmanship. The name Masumi is from a national treasure, Masumi no Kagami, meaning “mirror of truth.” Already a famous gold-medal winner, the brewery achieved even greater recognition in 1946 with the discovery of a new yeast variety, “Nanago” or No. 7, which has gone on to become the most widely used sake yeast in the world.
