AOC Cabardès - ROUGE
Grape varieties: Cabernet Franc 10%, Cabernet Sauvignon 20%, Merlot 20%, Malbec 10%, Syrah 20%, Grenache 20%.
Vinification : De-stemming prior to vinification in separate cuves for each grape variety. 25 to 30 days cuvaison on the skins to extract maximum fruit flavours. The blend is decided after vinification.
Ageing : In stainless steel tank.
Tasting notes: Dark red-purple colour, almost black in its youth. A very pure flavour of ripe red & black fruits (cherries, blackberries, mulberries…). On the palate, there is an intense fruitiness which is enhanced by a tannic structure, typical of the bordelais grape varieties. The wine is intended to be drunk in its youth, but can age over 3 to 4 years.
Food Matching: Grilled meats, Daube de canard, cassoulet, arbecues, poultry, hard cheeses.
