Short cold pre­fermentation skin maceration followed by low­temperature aging on the fine lees post­fermentation.

HMR White is a monovarietal Xarel·lo wine from vineyards planted in 1974. The nutrient­poor soils at high altitude in Alt Penedés are ideal for this versatile variety. A youthful and vibrantly fruited wine with sweet herbal scents with fresh green fennel at it’s crescendo. This bottling is full of the fruit flavors typical of the Xarel·lo variety: tart green apple, Limonera pear, pineapple skin, and faint notes of Spanish jasmine. A wine that is at once intensely fruited while remaining lightly herbal and refreshingly mineral.

GAINTUS ONE NIGHT'S ROSÉ

A select harvest of grapes specifically for this wine. Skins are allowed a cold maceration for one night only to obtain the soft color and then pressed the next morning at low pressure. Fermentation takes place in 700L concrete eggs with continuous batonnage occurring over three months.

A beautiful coral color rosé wine that is a literal bouquet of fragrances with notes of delicate pink rose petals, acacia blossom and sweet grass. The soft palate comes alive with an energetic acidity and a thirst­quenching mineral component that is a hallmark of the variety.

ADVENT XAREL·LO

A selective harvest is done of the best clusters of the old­vine Xarel.lo planted in 1974 in L’Avellà. The bunches are then transported to an ancient hay­barn, where they are hung to dry for more than 4 months in the breeze until the desired level of sugar concentration is reached. After vinification the wine ages in 300l new French oak barrels for 9 months.

This deliciously complex dessert wine has a powerful bouquet of white flowers such as Spanish jasmine, apricot, quince preserves or membrillo, and marcona almonds. The mouthfeel is exceptionally rich while remaining elegant and finessed with a full spectrum of flavors ranging from dried stone fruits to fresh tropical papaya and guava accented by soft cream tinged with vanilla. The finish lingers on the palate with a persistence that is never cloying.

The bodega and vineyards of Heretat MontRubì stand at over 2,000 feet above the sea, in the Catalan Pre­Coastal Range.
Here the land gives way to ancient forests of Mediterranean Pine, redolent with the scents of wild herbs and alive with the sounds of wild boar and hare scampering through the undergrowth and the calls from Bonelli’s Eagle high above.
