Grande Champagne XO

First Vineyard of Cognac.
Full and soft spirit although having preserved a certain ardour thanks to its ageing in red barrels (trunks).
Eye: gold supported with amber reflections.
Nose: dominants fruity (dried fruits among which hazelnut and almonds, candied fruits, citrus fruits), spiced (cinnamon, vanilla), sweetened (honey, toffee fair).
Notes rancio (Porto), empyreumatique (smoked, chocolate-brown), cereal (brioche), vegetable (dry spices, light tobacco), Woody.
Mouth: ample and round. Fruity (dried fruits), spicy, woody, empyreumatique, long. Synthesis: give a complex, ample, elegant. To sample quietly.

SINGLE VINEYARD SINGLE VINTAGE.
Our Petite Champagne 1976 was raised in the respect for a tradition the purest, raised first of all in new barrels of the forest of Tronçais during 18 months, these barrels were slightly burnt so that the wooden grip is slowly made with a homogeneity of the aromas, then this cognac continued are ageing in red barrels during 8 years, to finish then their route in old barrels selected until our days. Every intervention was made under the control of the BNIC (Interprofessional National Office of the Cognac). Well-balanced fine and supple in nose as in mouth, aroma of lily and bark of orange. very natural spirit, bottling in the demand under the control of the BNIC.

Grande Champagne La Péraudière

From our cellars, we have selected this 'Grande Champagne' Premier Cru of 1992 to celebrate the 140th anniversary of our business, founded in 1872. Its uniqueness lies in the fact that it has been aged in authentic casks, made by the best Cognac coopers; using hundred-year-old oak trees from our estate ‘La Péraudière’ which were chosen in 1989 for the exceptional subtlety of their grain. The staves were left to dry in the open-air for three whole years, and from these wonderful casks ‘La Péraudière’ cognac was born. Limited series of 1000 bottles.

Oak and steel, two essential components for making Cognac, are part of all the dualities of the world of spirits (hot and cold, live and still, strong and weak…).
Directly taken from a rough lumber log from the La Pallice shipyard in La Rochelle, this bloc of oak has been carved by a talented artisan, and fitted with a refined soft calf leather piece.
The bottle, a replica from last century, reflects simplicity and pure elegance; it has been adorned with a ring called the Turk’s head knot made by the sailors of the Hermione, Nicolas Forgeau and Jose Valier, at the Rochefort sur Mer royal maritime arsenal: a beautiful story.
The cask-strength eau de vie, which is naturally reduced after long years of ageing, comes up to the nose very softly, with fresh notes of exotic fruits (pineapple, mango), and notes of candied fruits (apricot, quince), and a rancio which subtly evolves on a coat of sandal wood and vanilla bean.

For this exceptionnal auction of top quality cognacs, the hammer touch down at 6000€.

Since 1872 five generations have contributed to the elaboration of the prestigious Cognac “signé NORMANDIN-MERCIER”. On the outskirts of the city of La Rochelle, Edouard Normandin makes wisely mature the best crus of Cognac, from Grande Grande and Petite Champagne.
The proximity of the ocean regulates the thermal fluctuations and gives them roundness and distinction. Throughout several decades, their color changes from golden yellow to dark brown and their bouquet develops; every Cognac has its own character that comes from the natural qualities of the oak wood and the length of time maturing in 350 liter barrels.
The degree of natural humidity of the wine cellars in which the barrels are stored constitutes, by its influence on the evaporation, one of the determining factors of ageing. The special balance between humidity and dryness that exists in the NORMANDIN-MERCIER cellars, gives a rare softness and balance to their Cognacs.
The reputation of the NORMANDIN-MERCIER house has been forged on the qualities of its old Cognacs, such as “Grande Champagne” and “Petite Champagne”, and on its traditional methods: its natural hue (no coloring), non chill-filtering, and respect for manual labor in the wine cellars.
With time the aroma of the Cognac has become richer: the initial floral and fruity perfumes have become impregnated with a slightly vanilla and woody note coming from the oak wood. The strength of the alcohol has decreased thereby benefitting a bouquet which has grown infinitely richer: this is when the “divin rancio” occurs.
The Cognac is then transferred into very old oak barrels, and afterwards into glass kegs called “Lady Janes” in which it can be conserved without decay. The oldest Cognacs are always kept in the “paradis”, which is the darkest part of the cellar that is kept separate; this natural evaporation is very poetically called “the hand of the Angels". During all the time it is ageing the Cognac gradually loses both degree and volume; but it is a lot less “poetic” as far as the Cognac Houses are concerned if they lose a large amount of their marvelous wine spirits.
The alcohol vapors nurture a microscopic mushroom, called "torula compniacensis", that blackens the walls of the wine cellars and is known as the “the Angels’ share” which remains completely visible!
The NORMANDIN-MERCIER Cognac is a product that is in constant evolution during its ageing process.
Normandin-Mercier Cognac is always striving for a very consistent level of high quality. Passion, intuition, rigor and loyalty, are the qualities that have been passed on to the young generation by previous generations; through osmosis certain Cognac genes must exist just as the sensitive nose of perfumers.
The wealth and diversity of the stock allows this young generation to create subtle blends of wine spirits and to conserve not only the authenticity of “Cognac de la Maison”, but also maintain the loyalty of great amateurs.
From the rigorous selection of the grapes during each step of turning grapes into cognac: original growth, quality of the grapes, quality of the wine, perfection of the distillation, quality of the barrels, the ageing process, and the work in the cellars, every “Cognac de la Maison” is UNIQUE. This work, coming from long experience, allows the “Maison NORMANDIN-MERCIER” to retain and master the quality of its COGNACS.
