Domaine Laroche owns 7.65 ha of this large Premier Cru. The slopes benefits from South-West exposure and protection against northern wind. It allow higher ripeness of grapes. The vineyard is planted with very old vines with strong personality.

Le Canon du Maréchal white

GRAPE VARIETIES
60% Muscat of Alexandria, 20% Muscat petit grain, 20% Viognier

VINIFICATION
Machine picked during the night. Skin maceration of 24 hours at low temperature before pressing. After racking, the alcoholic fermentation is temperature controlled at 18°C. The alcohol level is 13% alc/vol.

MATURING
This wine is bottled within 6 months of the harvest, and stored in air-conditioned cellars.

SOIL CHARACTERISTICS
Clay and limestone, with rolled pebbles from the foothills of the Corbières mountain range.

TASTING NOTES
Best drunk within 2 years at 8°C. Delightfully lively and fresh, it would be especially good with asparagus and shell-fish.

Le Pas du Moine

Guardian of the Provence spirits, the Mount Sainte Victoire gave birth to a splendid, uncontested typical terroir. In reference to the footpath furrowing the south facing slope of the Mount, the cuvee Le Pas du Moine invites you to exlore the richness of this magnificient Sainte Vctoire terroir.

Tasting notes
Eye: A lychee color robe with purple reflections.

Nose: Intense nose, playing with white floral and exotic fruits notes.

Palate: In mouth, the first impression is fresh and round, supported by the citrus fruits delicacy (guava, grapefruit….). A great lingering in the end.

Vinification
Night harvests, cold direct presseng, fermentation at low temperature: 14°C and then 18°C at the end of the fermentation.

Vin Noir

APPELLATION : AOC Cahors

LOCATION : Third Terrace

SOIL AND SUB-SOIL : Alluvial soils with round stones and gravelly clay

GRAPE VARIETAL : 100% Malbec

TECHNICAL WORK : After destemming, the grapes are heated to 65°C for a 6-hour prefermentation maceration. After cooling, the grapes are put into barrel fermentation, the wine will stay on its skins for 45 days for a slow, optimal extraction.

AGEING : The wine will then age in these barrels for 12 months.

TASTING NOTES : The color of this wine is intense. The aromatic intensity of the wine is revealed with amplitude at the first whiff, preserved black fruit on the second sniff, with sublime floral notes, more precisely violets. The remarkable aromatic extraction is demonstrated with a rare silkiness on the palate. The flavors of Malbec are fully revealed, giving off subtle notes of violets. The extended contact between the wine and the oak from the beginning of vinification makes for a harmonious balance and a subtle toast. After being aged in barrel, the tannins are particularly smooth and refined.

COMMENTS : The wine must be decanted before tasting. Serve at 20°C
