Domaine Castellas

Cuvée Tradition
Red Wine

Soil:
Domaine de Castellas is located in the Agly Valley, in the north of Roussillon, in the village of Rasiguères.
This wine encapsulates an outstanding vineyard environment: the Agly area whose distinguishing feature is its ability to produce powerful, characterful wines. Blended from Grenache noir, Syrah and Carignan, the wine boasts remarkable aromatic complexity. The vineyards are planted on rolling hillsides that are home to brown schist soils at an elevation of 300 metres above sea level.

Grape varieties:
40% Syrah, 40% Grenache noir, 20% Carignan.

Production method:
The three grape varieties are fermented separately using different techniques. Carignan yields its finest aromatic expression when carbonic maceration is used. The grapes are brought whole to the winery and remain uncrushed in the tank where they macerate for two to three weeks.
Grenache noir and Syrah are made using traditional methods – vatting occurs after the fruit is destemmed.
During maceration, which can last for two weeks, the cellar master uses the pumping over process several times to extract colour and aroma.

Ageing:
Traditional, in tanks avec being racked several times during the six months following the harvest.

Description:
Beautiful garnet hue with dark purple tints. The nose is powerful and aromatic and unfurls notes of ultra ripe red fruits, violet, spice and garrigue. An honest attack offers up wonderful volume with upfront, soft tannins. The finish reveals beautifully concentrated jammy fruit aromas and substantial length on the palate.

Storing:
Enjoyable from now on, will mature well for 3 or 4 years in your cellar.

Serving suggestion:
This wine is the ideal companion for a T-bone steak with porcini
mushrooms, venison steak, wild boar stew, pork tenderloin, pheasant
supreme and roast pigeon with figs. It also pairs marvellously with
characterful cheeses.
Serving temperature: Serve between 14 and 16°C.

Red Wine

Soil:
The grapes in this wine are grown on old plots planted in Agly in the north of the Eastern Pyrenees. The soils contain extremely high quality brown schists. The vines grow on arid, low hillsides and enjoy ideal sun and wind exposure.

Grape varieties:
70% Syrah, 30% Grenache Noir

Production method:
Top quality plots are carefully selected for this cuvée and are picked at perfect ripeness. The grapes are tasted to assess the ripeness. The different grape varieties are processed separately. When they arrive at the cellars, the Grenache and Syrah grapes are destemmed and crushed for traditional maceration. The juices are extracted by gentle and regular pumping over.

Ageing:
The wine is aged in new casks for 9 months.

Description:
Deep garnet red with purple tints. A complex, intense bouquet with notes of jammy dark berries, marshmallow, mocha and sweet spices.
Full and creamy on the palate, celebrating all the power and finesse of the Agly terroir. This wine has velvety tannins and a lovely fullness, the perfect combination of freshness and maturity.

Storing:
A great wine for laying down, it can be enjoyed today but will age perfectly for 6 to 8 years in your cellar.

Serving suggestion:
This grand cuvée is the ideal partner for your gourmet meat-based meals. A few suggestions: game, rabbit with prunes, lamb shoulder with spices, Peking duck...
Serving temperature: Serve between 16 and 18°C, ideally in a carafe.

Muse de Collioure

Rosé Wine

Soil:
The Collioure vineyard is in the extreme south of France where the Pyrenees meet the Mediterranean. The vines there grow on schist hillside terraces.

Grape varieties:
10% Mourvèdre, 5% Carignan, 20% Syrah, 65% Grenache Noir.

Production method:
Direct pressing. Controlled temperatures. Regular remontages.

Ageing:
In full vats for a few months. Bottled young to retain all its fresh aromas.

Description:
Refined, with tasty and fresh notes of summer berries, this «gastronomic» rosé brings together the strength and mineral edge of
a unique terroir. A tender luminescent pink with coral tints. A delicate and smooth bouquet with fragrances of young summer berries like strawberry, raspberry and redcurrant. An intense and seductive palate reveals a delicious, fresh and mineral finish.

Serving suggestion:
This «gastronomic» rosé will be the ideal companion for grilled fish, scallops, asparagus risotto, pork and coriander skewers, grilled sea bass with fennel and more.
Serving temperature: Serve at 10°C.
