The creation of this product has benefited from the careful attention of experts mastering in the « Art of Winemaking ». It Is the fruition of a harmonious blend of 3 grape varieties
selected for their exceptional quality : Pinot Blanc, Chardonnay and Auxerrois. Gentle maturing for at least two years brings about rich characteristics of a rare complexity.

Tasting Notes
This wine boasts a shiny pale gold colour with a silver disk, fine and regular bubbles, as well as lasting bead. The nose is delicate with dried almond and roasted hazelnut aromas, buttery notes, followed by scents of grapefruit, cake and white flowers. The palate is both elegant and full bodied, producing good depth underscored by buttered toast notes, with remarkable balance through to a persistent citrus finish.

Food Pairing
This is a gastronomic Crémant. Rich and complex, it is charming as an aperitif, but is also the perfect combination with scallops in a creamy sauce, grilled lobster, lemon chicken, veal and mushroom stew, as well as soft cheese such as valencay, camembert, saint-félicien and rocamadour... or with dessert, pairing especially well with peach, apricot or almond tarts.

Winemaking
We have taken great care in the elaboration of this Chardonnay Cremant. It illustrates our objective of underscoring the qualities expressed by a unique Chardonnay in view of proposing a fine
approachable wine. This was achieved by carrying out 12 months ageing to bring out all of its nuances and special flavors. Handpicked harvesting beforehand in order to press whole grapes, is just one of the strict measures involved in the production of this Cremant.

Tasting Notes
Its straw yellow color attracts the attention, embellished by a pretty neck of thick froth which gradually evolves into a delicate necklace of bubbles. The nose is conquered by white flower and strawberry scents, highlighted by lovely toasted notes and a hint of hazelnut. Last but not least, the palate enjoys its creamy and elegant fizz, with just the right amount of acidity to produce perfect balance. The charm of its persistent and crunchy finish is long lasting.

Food Pairing
If L'Exception is the special guest of successful aperitifs, it also goes admirably well with fine gastronomic recipes. For example you will appreciate the elegant pairing offered by the following dishes: oyster soup, lobster medallions, stewed turbot, rack of lamb with fennel, pear zabaglione or baked Alaska.

Winemaking
Direct pneumatic pressing (vertical drains to obtain high quality juices), clarification, controlled fermentation temperatures, racking and maturing on fine lees for 4 months. Ageing in vats for 5 months
before bottling.

Tasting Notes
Dry and refined Riesling exhales a sophisticated bouquet with mineral (flint stone), floral and delicate fruit nuances evoking citrus, pine sap and cinnamon notes. This wine sports an attractive intense yellow color that is at once brilliant and limpid. Its nose is strong and opulent underscored by yellow flower and honey aromas. The attack on the palate is silky. Boasting discrete, all the while refreshing acidity, this wine displays well balanced matter with plenty of volume. The finish offers heaps of fat and amplitude. Its profound and refined terroir translates to impressive strength on the finish. Its aromatic persistence is long and quite ample. Notes of acacia flowers and honey come to the fore. This is a wine that can be appreciated now, or later on, as it has the capacity for ageing.

Food Pairing
Hatschbourg Riesling is a good start to a meal when served with salt water fish or cooked shell food. Sumptuous, it is at its best with white meat dishes.
