WINEMAKING
The grapes were handpicked during early morning to preserve its charming aromatic character. Whole bunch pressing in pneumatic press. Cold settling for 16 hours, racked off its heavy lees before inoculating with neutral yeast strains. Temperature controlled fermentation at 14-16ºC for 16-20 days. Aged on its lees for 6 month with occasional stirring. Clarified and filtrated before bottling in late spring.

TASTING NOTES
Brilliant pale lemon colour. Intense stringent aromas of peaches, white flowers, stony minerals and a hint of fresh sea breeze. The palate offers an energetic combination steely acidity with charming peachy fruit and stony minerals. It finishes clean with a mouth watering acidity and long complex persistency.

WINEMAKING
The grapes were handpicked at the optimum stage of ripeness during the first forth night of September. The juices are stored throughout the year in insulated stainless steel tanks below 5ºC Three weeks prior to bottling the juices are fermented in temperature controlled stainless steel tanks of 15.000 liters at 12-16ºC. Charmat Method fermentation stopped at 1-2ºbrix. Clarified filtered. Residual sugar was then adjusted with natural grape must concentrate to 60gr/L and CO2 was adjusted to 1800ppm by dosage prior to bottling.

TASTING NOTES
Bright lemon-gold color with light pearliness. The nose is clean, youthful with pronounced fruit and floral notes reminiscent of mandarin peel, honeysuckle and sweet orange blossom. On the palate it has a sweet lusciousness that coats the mouth and yet refreshes itself with airy bubbles and harmonious balance.

What is a kiss if not to be followed by one thousand more?. A glass is just a glass if to be left un-poured. Lovely aromas of sweet, lush strawberries – oh so provoking it´s the young Monastrell with touch of Shiraz, so complete and invoking Lips glisten and part, moistened by a wine they are sure to adore.

WINEMAKING
The grapes were handpicked at the optimum stage of ripeness from mid September throughout October. A combination of carbonic maceration and traditional vinification in temperature controlled stainless steel tanks of 40.000 kilos at 24-29ºC. Pressed and racked to epoxy lined cement tanks where the wine underwent malolactic fermentation. The wine was bottled after fining and filtration in March 2015.

TASTING NOTES
Medium purple in colour, it sports an expressive nose of juicy strawberries and sweet cherries. The fruit is pure and luscious. The wine is layered and ripe on the palate with good concentration and an explosion of fruity flavours.

We are a dynamic winery made up of an enthusiastic and experienced team of 21 professionals. The team is inclusive of an educated and highly experienced sales team with approximately 75 years of experience between them; efficient and friendly logistics coordinators; in house graphic designers; and an impressive team of 5 winemakers being lead by David Tofterup, Hammeken Cellars director of winemaking, who has achieved his success through years of theoretical and practical training internationally.

The set up we have allows our clients to be active participantes in the brand process. We value the imput and knowledge that our clients have with regards to their individual and unique markets. We thrive on what we call “wine-storming” where we bounce ideas off one another and together with the clients come up with a uniquely marketable product. We are currently exporting throughout Europe, Asia and the Americas with aproximate export of +1.5 million cases and growing.
