Amphora Natural Wine

Natural (no sulfites added) White Wine

Grape variety: 100% Xarel·lo from old vines cultivated with Organic and Biodynamic farming.

Elaboration: Limited production of 2.602 bottles in 2016 vintage.

Winemaking: Natural alcoholic fermentation, with wild yeasts, in clay amphorae. The porosity of the amphorae causes an hiperoxidation precipitating all the oxidable particles down. The result is a clean and clear wine.

Tasting notes: Light yellow. The cleanest, clearest and most transparent wine from Parés Baltà. In the nose is complete, elegant and with notes of white fruit aromas. In the palate is very complex and we could find again the white fruit aromas and we could appreciate a note of toasted almond.

Electio

Organic and Biodynamic White Wine

Grape variety: 100% Xarel·lo from old vines (more than 80 years old).  

Elaboration: Limited production of 2.539 bottles in 2014 vintage.

Winemaking: After a light maceration for four hours, the grapes were lightly pressed and then, fermented in new Allier barrels during 16 days at an average temperature of 18° C. After the fermentation, the ageing was continued in the same barrels for four months over lees and with periodic battonage.

Tasting notes: Pale yellow color with light greenish tints. Clear and transparent. Good intensity on the nose with notes of very mature fruit and floral tones. In the mouth it is soft, creamy and with good volume as a result of the battonage. Long and pleasant finish.

Radix

Organic & Biodynamic Rosé Wine

Grape varieties: 100% Syrah.

Elaboration: Limited production of 4.079 bottles in 2016 vintage.

Winemaking: short maceration of six hours at low temperature. Fermentation at 16° C in stainless steel tanks for 5 weeks.

Tasting notes: Intense cherry color, with blue tints. On the nose it is full of aromas of blackberries, cherries, plums and strawberries. In the mouth it is powerful and concentrated. Extensive, tasty and with a balanced acidity. Soft and pleasant finish.

Mas Irene

Organic and Biodynamic Red Wine

Grape varieties: 74% Merlot , 26% Cabernet Franc. 

Winemaking: First a cold pre-fermentation maceration at 8ºC during 5 days to extract as much as possible of color and aromas. Then the two varieties were fermented separately at a controlled temperature of 25˚ C. Prolonged during 19 and 24 days respectively.
Ageing of 13 months in new French Allier oak barrels.

Tasting notes: Intense deep red color with black layer. On the nose, intense and complex aroma of preserved red fruit combined with toasts and spices. In the mouth it is soft and oily, with good structure. Intense flavor of red fruit, spices and toasts from the oak. Long and pleasant finish.

Marta de Baltà

Organic Red Wine

Grape variety: 100% Syrah. 

Elaboration: Limited production of 2.107 bottles in harvest 2012.

Winemaking: Maceration and fermentation in 400L new French oak barrels at a controlled temperature of 24-29ºC. We made manual pigeage 3 times per day during the maceration process. Prolonged during 25 days.
Ageing 13 months in new French Allier oak barrels.

Tasting notes: Intense violet color. On the nose, intense and complex aroma of ripe dark fruits of plums and black mulberries. In the mouth it has intense flavor of dark bitter chocolate and sweet tobacco combined with the toasty notes and the vanilla from the oak. Great concentration and body with long and refreshing finish.

Organic and Biodynamic White Wine

Grape variety: 100% Xarel·lo.

Winemaking: After a light skin maceration during four hours, the grapes were lightly pressed, and then fermented in stainless steel tanks during 18 days at an average temperature of 16°C. After finished fermentation the wine was kept in contact with the thin lees from the fermentation during 3 months with daily battonages.

Tasting notes: Pale yellow color with green tints. Clear and transparent. Medium intensity on the nose with notes of pear and banana. On the mouth it reminds us of a pear Tarte Tatin with Crème Anglaise.

Grape variety: 100% White Grenache. The variety comes from a vineyard planted at 700 meters (about 2300 ft), one of the highest parts of the Penedès region.

Winemaking: After a light skin maceration during four hours, the grapes were lightly pressed, and then fermented in stainless steel tanks during 20 days at an average temperature of 16°C. After finished fermentation the wine was kept in contact with the thin lees from the fermentation during approximately 3 months with daily battonage.

Tasting notes: Pale white with greenish hues, crisp and transparent. Rich varietal expression on the nose with intense, mature, white fruit with creamy notes from the contact with the lees during various months of battonage. Full bodied with long and pleasant aftertaste.

Organic and Biodynamic Red Wine

Grape variety: 100% Red Grenache. The variety comes from a vineyard planted at 600 meters (about 2230 ft), one of the highest parts of the Penedès region.

Winemaking: Fermentation at 20 º C in stainless steel tanks for 4 weeks with 3 daily pump-over’s. 
Aging 5 months in new  and 2 fill French oak barrels.

Tasting notes: Lovely ripeness of generous raspberry flavours. The nose shows creamy and fresh wild fruit, very complex and intense. This shows dominating fresh red fruit with a hint of exotic spice note and smoky oak undertones in mouth. Well balanced, long and very fine.

Blanca Cusiné

Organic Sparkling White Wine

Grape variety: 60% Xarel·lo, 20% Chardonnay and 20% Pinot Noir. 

Winemaking: Chardonnay and Xarel·lo were fermented in stainless steel tanks at 16°C. The Pinot Noir was fermented in new French oak barrels at 20˚C. Pinot Noir has aged over lees during two months with battonage practiced three times per week.
Second fermentation in the bottle following the traditional method, with ageing for 60 months (Gran Reserva)

Tasting notes: Yellow color with golden tints. On the nose complex and subtle aroma with delicate notes of almonds, hazelnuts, honey and prickly pear. In the mouth it is fresh and round. Notes of preserved fruit together with flavors of almonds and honey. Long and complex finish.

Elaboration:  Limited production of 3.767 bottles during 2012 vintage. 

Winemaking: Fermentation in stainless steel tanks at 16° C for 16 days. Ageing over lees during three months with daily battonage.
Second fermentation in the bottle following the traditional method, with ageing for 30 months (Gran Reserva).

Tasting notes: Subtle rosé colour with a salmon rim and tiny bubbles that burst into delicate, yet complex notes of dried and jammy fruits. On the palate, energetic and creamy with well integrated bubbles, reminiscent of ripe and jammy fruits, finishing with a great structure.

Organic Sparkling White Wine

Grape varieties: 60% Macabeu and 40% Chardonnay. 

Elaboration: Limited production of 2.235 bottles in 2009 vintage.

Winemaking: The Chardonnay ferments at 16-20°C in new French oak barrels during 13 days. Macabeu ferments in stainless steel tanks at16ºC during 15 days and with daily “battonage” at the end of the fermentation. Ageing over thin lees for two months with battonage 3 times per week for the Chardonnay.
Second fermentation in the bottle following to the traditional method, with ageing for 60 months (Gran Reserva).

Tasting notes: Straw yellow with hints of new gold color. Fine and persisting bubble. On the nose sophisticated aroma that comes from the ageing in oak barrels. It has creamy notes that reminds us at candied fruit with toasty hints very well balanced. In the mouth we can appreciate that it is a different cava. Long and persistent after taste.

About us

Company details

Parés Baltà is a family owned winery with traditions that goes back to 1790. We produce high quality wines and cavas. The grapes come from our 5 estates, situated around the winery and in the mountains of Penedès. The altitude varies from 170 to 750 m. and offers a diverse mixture of soils and microclimates that give a special personality to our wines.
We practise organic and biodynamic farming being certified by Demeter since 2013. We have our own flock of sheep to fertilise the vineyards and bees that help pollinate the vines, bringing the essence of the Mediterranean ecosystem to our grapes.
We are winemakers with a long tradition but with new and fresh ideas. The management is led by Joan and Josep Cusiné. The winemaking is in the hands of Mª Elena Jiménez and Marta Casas, oenologists and wives of Joan and Josep. Two skilled young women whose efforts are reflected in the quality of the wines, showing fine character and concentration yet with elegance and balance.
In 2003 we started a new project in the Priorat region (Gratavinum ) and, 2 years later, a new adventure in Ribera del Duero ( Dominio Romano ).
We invite you to enjoy our wines and also to visit the winery and vineyards.
