Production and maturation: The two varietals are fermented separately in stainless steel tanks. Nero d'Avola ferments during 5-6 days at around 25°C and Cabernet Sauvignon fermentation process is similar, only to differ in the temperature of fermentation which is slightly higher. During fermentation both parts of the must are daily overpumped.  After the separate malolactic fermentation in stainless steel tanks, half of Cabernet Sauvignon is matured for a period of time in oak, while Nero d'Avola is only matured in stainless steel tanks. When the wine has reached the satisfactory level of structure decided by the winemaker, the two parts of the Cabernet Sauvignon are blended. Thereafter the last blend is made of both Nero d'Avola and Cabernet Sauvignon which results in the final cuvée.

After fermentation in French 225 liter barrels for 6 weeks, the wine is aged on lees in a temperature controlled cellar in stainless steel tanks for a further 3 months. The wine is approachable now, but can be matured for another 3-5 years for further complexity.

This wine can by enjoyed with seafood, paella or antipasti.

Winemaker's note: The grapes are hand sorted and then destemmed before gentle pressing. The Sauvignon Blanc was fermented at cool temperature in stainless steel tanks to retain freshness while the Semillon was fermented in 225 liter new French oak barrels for 6 weeks to enhance complexity and richness. The wine can be stored for 3-5 years.

Winemaker's note: Harvested in the early morning from a selection of hillside and south facing vineyards. Picked at optimum ripeness (24-25 Balling) and crushed, but not destemmed, to enhance the fresh berry fruit characters. Fermented in stainless steel tanks for 7- 10 days and then a portion taken to barrel for malolactic fermentation, with the balance being completed in tank. Matured in small French barrels for more than a year before being blended and gently fined.

Malolactic fermentation in stainless steel tanks and then matured for almost a year in small French barrels to further aid in the development of structure and soften the tannins.
